Ingredients

Scale

Brownie Base

  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 tsp vanilla extract
  • ½ tsp salt

Cheesecake Layer

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract

Caramel Topping

  • 1 cup caramel sauce (store-bought or homemade)
  • Sea salt (optional, for salted caramel twist)

Optional Garnish

  • Whipped cream
  • Chocolate shavings
  • Brownie crumbs

Instructions

  1. Prepare brownie base: Preheat your oven to 350°F (175°C) and grease a springform pan. Melt the unsalted butter until liquid and combine it with sugar, then beat in the eggs one at a time. Stir in the cocoa powder, vanilla extract, all-purpose flour, and salt until the batter is smooth and well mixed. Spread this brownie batter evenly across the bottom of the prepared pan.
  2. Bake brownie base: Place the pan in the oven and bake the brownie base for 20 minutes, or until it has set but is still soft in the center. Remove from oven and set aside while preparing the cheesecake layer.
  3. Mix cheesecake filling: Using a mixer, beat the softened cream cheese with sugar until the mixture is smooth and creamy, ensuring no lumps remain. Add the eggs one at a time, blending well after each addition. Then mix in the vanilla extract until fully incorporated.
  4. Assemble and bake cheesecake layer: Pour the cheesecake batter gently over the cooled brownie base. Lower the oven temperature to 325°F (163°C) and bake the assembled cheesecake for 50 to 55 minutes. The cheesecake should be set on the edges with a slight wobble in the center when done.
  5. Chill the cheesecake: Remove the cheesecake from the oven and allow it to cool completely at room temperature. Once cooled, cover the cheesecake and refrigerate it for at least 4 hours or preferably overnight to allow flavors to meld and texture to firm up.
  6. Add caramel topping and garnish: Just before serving, gently warm the caramel sauce to a pourable consistency. Drizzle it evenly over the top of the chilled cheesecake. Optionally, sprinkle sea salt on the caramel for a salted caramel twist. Garnish with whipped cream, chocolate shavings, or brownie crumbs if desired to elevate presentation and texture.

Notes

  • For best results, use room temperature cream cheese to ensure a smooth cheesecake batter.
  • Make sure not to overbake the cheesecake layer to keep it creamy and avoid cracks.
  • You can use homemade caramel sauce for a richer flavor or store-bought caramel for convenience.
  • Allowing the cheesecake to chill overnight improves texture and flavor blending.
  • Use a water bath if desired to prevent cracking, although this recipe usually sets well without one.
  • Ensure all ingredients are fresh, especially eggs and cream cheese, for best taste and texture.
