  • Flour, for dredging
  • 3 tbsp olive oil, divided

Sauce

  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • ½ medium onion, chopped
  • 1 tbsp Dijon mustard (or more to taste)
  • 1 tbsp Worcestershire sauce (or more to taste)
  • 3 cloves garlic, minced
  • ⅔ cup chicken broth
  • ½ cup full-fat sour cream

Instructions

  1. Season & Dredge Chicken: In a bowl, season the chicken pieces with garlic powder, salt, and pepper. Lightly coat each piece with flour to prepare for searing.
  2. Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken in batches, making sure not to crowd the pan, and cook until golden brown on all sides. Remove and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil and the butter. Once melted, add the sliced mushrooms and chopped onion. Sauté until soft and golden, about 5-7 minutes.
  4. Add Flavorings: Stir in the Dijon mustard, Worcestershire sauce, and minced garlic. Cook for about 1 minute, allowing the flavors to meld and the garlic to become fragrant.
  5. Simmer with Broth and Chicken: Pour in the chicken broth, scraping the bottom of the pan to lift all the flavorful browned bits. Return the seared chicken pieces to the skillet and cook for 2 minutes to blend flavors.
  6. Finish with Sour Cream: Remove the pan from heat and stir in the sour cream carefully, warming the mixture through without boiling to prevent curdling. Adjust seasoning with salt and pepper as needed. Serve immediately.
