For the Rolls

  • 1 tablespoon water, warmed (about 105-115°F)
  • 6 tablespoons (75 g) granulated sugar, divided
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 cup (245 g) whole milk, warmed (about 105-115°F)
  • 7 tablespoons (99 g) unsalted butter, melted, divided
  • 1 teaspoon kosher salt
  • 1 large egg, room temperature
  • 3 ½ cups (444.5 g) bread flour

For the Cinnamon Honey Butter

  • ¼ cup (½ stick / 57 g) unsalted butter, softened
  • 2 tablespoons confectioners’ sugar
  • 2 tablespoons honey
  • ½ teaspoon cinnamon

Instructions

  1. Activate yeast: In the bowl of a stand mixer fitted with a dough hook, combine the warm water, 1 teaspoon of sugar, and yeast. Let sit for about 5 minutes until the mixture is thick and the yeast and sugar are dissolved.
  2. Mix wet ingredients: Add the remaining 5 tablespoons sugar, whole milk, 6 tablespoons melted butter, and kosher salt to the yeast mixture. Mix just until combined.
  3. Add egg: Incorporate the room temperature egg into the mixture and mix to combine fully.
  4. Add flour and mix dough: Gradually add the bread flour and mix on medium-high speed for about 3 minutes, scraping the dough into the center of the bowl as needed.
  5. Knead dough: Switch to low speed and knead the dough for 3-4 minutes until smooth and elastic.
  6. First rise: Lightly spray a large bowl with nonstick cooking spray, place the dough inside, cover with a kitchen towel or plastic wrap, and let it rise in a warm place for 1 to 2 hours or until it doubles in size.
  7. Prepare baking dish: Lightly spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
  8. Shape rolls: Gently punch down the risen dough to deflate it. Divide the dough into 12 equal pieces by either halving until you reach 12 portions or rolling into a log and cutting. Shape each piece into a smooth ball and place evenly spaced in the prepared baking dish.
  9. Second rise: Cover the rolls with a kitchen towel and allow them to rise again in a warm place for about 30 minutes, or until nearly doubled in size.
  10. Preheat oven: About 10 minutes before baking, preheat the oven to 350°F (175°C).
  11. Bake rolls: Bake the rolls for 12-15 minutes or until golden brown on top.
  12. Brush with butter: Remove the rolls from the oven and brush them immediately with the remaining tablespoon of melted butter for a soft and flavorful finish. Serve warm.
  13. Prepare cinnamon honey butter: In a medium bowl, combine the softened butter, confectioners’ sugar, honey, and cinnamon. Mix well until smooth and serve alongside the warm rolls.
