A delicious and comforting Sweet Potato Taco recipe featuring roasted sweet potatoes, seasoned ground beef, and fresh toppings like guacamole, pico de gallo, and sour cream. It’s a perfect blend of sweet, smoky, and savory flavors for a cozy and flavorful meal.

Ingredients

Scale

Sweet Potatoes

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp smoked paprika

Beef Mixture

  • ½ lb ground beef (85% lean)
  • 1 tbsp taco seasoning
  • 2 tbsp water

Toppings

  • ½ cup pico de gallo (diced tomatoes, onion, cilantro, jalapeño, lime juice)
  • ¼ cup guacamole (mashed avocados with lime juice)
  • 2 tbsp sour cream

Instructions

  1. Roast Those Sweet Potatoes (The Star Treatment!)
Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, salt, pepper, and smoked paprika. Spread them out on a baking sheet with space to avoid steaming. Roast for 15 minutes, then flip each cube to ensure even caramelization. Continue roasting for another 10-15 minutes until the potatoes are fork-tender and have crispy edges.
  2. Brown the Beef (Channel Your Inner Spice Master)
While the sweet potatoes roast, heat a skillet over medium heat and add the ground beef. Let it sear untouched for 2 minutes to develop a flavor crust, then crumble and cook until no pink remains. Drain excess fat if desired. Add the taco seasoning and 2 tablespoons of water, then simmer for 2 minutes to coat the beef evenly with spices. Taste and adjust seasoning as needed.
  3. Assemble Your Masterpiece (The Fun Part!)
Warm your serving bowls in the oven for 2 minutes for extra coziness. Begin by layering the roasted sweet potatoes as your base, then top with the seasoned ground beef. Arrange pico de gallo and guacamole side-by-side rather than stacked, so every bite contains a blend of flavors. Finish with dollops of sour cream and garnish with extra cilantro if desired.

Notes

  • For a healthier oil alternative, use avocado oil for roasting sweet potatoes.
  • If smoked paprika is unavailable, substitute with regular paprika and a pinch of cumin.
  • Ground turkey or lentils can be used instead of beef for a different protein option.
  • Dairy-free alternatives for sour cream include coconut yogurt or cashew cream.
  • Cut sweet potato cubes smaller for faster cooking time during roasting.
  • Spread sweet potatoes out while roasting to avoid steaming and ensure crisp edges.
