Burger Ingredients

- ½ red onion, thinly sliced
- 6 brioche buns
- 8 ounces crumbled Feta cheese
- 1½ cups arugula
Blueberry Sauce
- 1 pint fresh or frozen blueberries
- ¼ cup sugar
- 3 tablespoons lemon juice
- 1 tablespoon cornstarch
- ¼ cup water
Jalapeno Aioli
- 1–2 fresh jalapenos, seeded and coarsely chopped
- ¼ cup fresh basil leaves
- ¼ cup olive oil
- 2 tablespoons lemon juice
- ½ teaspoon garlic powder
- ¼ cup mayonnaise
- Salt to taste
- Soak Onion Slices: Place the thinly sliced red onions in a large bowl of water and let them soak while you prepare the other components. This reduces their sharpness for the burger.
- Prepare Blueberry Sauce: In a medium saucepan over high heat, combine the blueberries, sugar, lemon juice, and a pinch of salt. Bring the mixture to a boil. In a separate small bowl, mix cornstarch with water until smooth and slowly drizzle into the boiling blueberry mixture, stirring constantly. Add a couple of the soaked onion slices (pat dry first) and a handful of fresh arugula.
