Tomato Base
- 28 ounce (796 mL) can whole peeled San Marzano tomatoes

- Crush the tomatoes: In a medium bowl, empty the entire can of San Marzano tomatoes. Using your hands or a spoon, crush the tomatoes until you reach a slightly chunky, spreadable consistency that will provide texture to your sauce.
- Combine ingredients: Add the ¼ teaspoon salt, 1 teaspoon dried oregano, 1 tablespoon extra virgin olive oil, 1 bay leaf, finely chopped 2-3 garlic cloves, 2 tablespoons minced fresh parsley, and a pinch of chili flakes if desired to the crushed tomatoes. Stir the mixture thoroughly to evenly distribute all herbs and seasonings.
- Let it rest: Allow the sauce to sit at room temperature for about 30 minutes. This resting period lets the flavors meld together and develop a richer, more complex taste without cooking.
