Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken, then season with salt, black pepper, and paprika. Cook the chicken for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Prepare the Orzo and Sauce: In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Add orzo pasta and stir to coat it in the garlic and oil mixture for about 1 minute. Pour in the chicken broth and milk, stirring to combine. Bring the mixture to a simmer and cook for 7-8 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
  3. Add Broccoli and Cheese: Stir in the broccoli florets and continue to cook for an additional 3-4 minutes until the broccoli is tender and the orzo has a creamy consistency. Lower the heat and add the shredded cheddar cheese. Stir continuously until the cheese is fully melted and the sauce is smooth.
  4. Finish the Dish: Return the cooked chicken to the skillet and stir well to combine all the ingredients evenly. Taste and adjust seasoning by adding extra salt, pepper, or red pepper flakes if desired.
  5. Serve: Garnish the dish with freshly chopped parsley, extra shredded cheese, and crushed red pepper to add color and a bit of spice. Serve warm and enjoy this hearty and cheesy meal.
