Pumpkin Cream Cheese Swirl

  • ⅔ cup pumpkin puree
  • 1 large egg, room temperature
  • ¼ cup granulated sugar

  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt

Brownie Batter

  • 18.3 ounces fudge brownie mix (1 box)
  • 2 large eggs, room temperature
  • ½ cup vegetable oil
  • 3 tablespoons water

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly spray an 8×8-inch baking pan with nonstick spray or line it with parchment paper to ensure easy removal of the brownies. Set aside.
  2. Make the pumpkin cream cheese mixture: In a medium mixing bowl, using a hand or stand mixer, combine the cream cheese, pumpkin puree, 1 egg, granulated sugar, pumpkin pie spice, cinnamon, and kosher salt. Beat on medium speed until the mixture is smooth and well combined. Set aside.
  3. Prepare the brownie batter: In another bowl, prepare the fudge brownie mix according to the box instructions by combining it with 2 eggs, vegetable oil, and water. Stir until the batter is smooth and uniform.
  4. Layer the batter: Spread about two-thirds of the brownie batter evenly into the prepared baking pan. Then, drop spoonfuls of the pumpkin cream cheese mixture over the brownie batter as evenly as possible.
  5. Add remaining brownie batter: Spoon the remaining one-third of the brownie batter over the cream cheese mixture, trying to cover as much surface as you can.
  6. Swirl the mixtures: Using a spoon or a toothpick, gently swirl the two mixtures together by dragging through both layers in a figure-eight or random swirling pattern. This creates a beautiful marbled effect.
  7. Bake: Place the pan in the preheated oven and bake for 35-40 minutes, or until the center is set and no longer gooey when tested with a toothpick.
  8. Cool and serve: Remove the brownies from the oven and allow them to cool completely in the pan before cutting into squares and serving.
