Ingredients

Scale

Main Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup whole milk or heavy cream
  • Salt and black pepper, to taste

Optional Ingredients

  • Fresh thyme or rosemary, for an herbal note
  • Shredded cheese, for garnish
  • Chopped chives, for garnish
  • Crumbled bacon bits, for garnish
  • Sour cream, for garnish

Instructions

  1. Gather Your Ingredients: Prepare all your ingredients by peeling and dicing the potatoes, chopping the onion, and mincing the garlic to have everything ready for cooking.
  2. Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Then add the garlic and cook another minute until fragrant.
  3. Create the Roux: Sprinkle the flour over the cooked onions and garlic while stirring constantly for about 2 minutes. This step thickens the soup and removes the raw flour taste.
  4. Add the Potatoes and Broth: Gradually whisk in the chicken or vegetable broth, scraping up any browned bits from the bottom of the pot. Add the diced potatoes, season with salt and pepper, then bring to a boil. Reduce heat and simmer for 15–20 minutes until the potatoes are tender.
  5. Blend for Creaminess: Use an immersion blender to puree the soup to your preferred texture; blend fully for a smooth soup or partially for some chunks.
  6. Add Milk or Cream: Stir in the milk or heavy cream and cook over low heat for another 5 minutes. Taste and adjust seasoning as needed.
  7. Serve and Garnish: Ladle the soup into bowls and top with garnishes such as shredded cheese, chives, bacon bits, or a dollop of sour cream to elevate flavor and presentation.

Notes

  • Russet potatoes are preferred for their starchy texture, but Yukon Gold potatoes can be used for added buttery flavor.
  • Using an immersion blender allows you to control soup texture – blend partially for a heartier soup or fully for a creamy finish.
  • The roux is essential to achieving the soup’s thickness; do not skip or reduce the flour amount.
  • For a vegetarian version, use vegetable broth and avoid bacon or other meat-based toppings.
  • Leftover soup can be refrigerated for up to 3 days and reheated gently on the stove.
