Ingredients

Scale

Pie Filling

  • 1 1/2 cups dark corn syrup
  • 1 cup brown sugar
  • 3 large eggs
  • 1/2 cup butter, melted
  • 2 cups pecan halves

Topping and Assembly

  • 1 15.25 ounce box yellow cake mix
  • 1 cup boiling water
  • 1/2 cup butter, melted
  • 1 cup pecan halves

Serving

  • Vanilla ice cream, for serving

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or coat it with nonstick spray to prevent sticking.
  2. Mix pie filling: In a mixing bowl, whisk together the dark corn syrup, brown sugar, eggs, and 1/2 cup melted butter until the mixture is smooth and well combined. Stir in 2 cups of the pecan halves evenly.
  3. Pour filling into dish: Pour this pecan mixture into the prepared baking dish, spreading it out evenly to form the base layer.
  4. Add cake mix and butter: Sprinkle the dry yellow cake mix evenly over the pecan filling surface. Drizzle the remaining 1/2 cup melted butter on top of the cake mix to moisten it evenly.
  5. Pour boiling water: Carefully and slowly pour the boiling water over the cake mix layer without stirring, allowing the water to soak through and activate the cake mix.
  6. Add remaining pecans: Scatter the last 1 cup of pecan halves evenly over the top of the cobbler for a crunchy topping.
  7. Bake: Place the baking dish in the preheated oven and bake for 45 to 50 minutes. The cobbler is done when the top turns golden brown and the pecans are set.
  8. Cool and serve: Remove the cobbler from the oven and let it cool for about 20 minutes. Serve warm, ideally topped with a scoop of vanilla ice cream.

Notes

  • Use dark corn syrup for a deeper, richer flavor in the filling.
  • Do not stir after pouring boiling water; this layering method helps create the cobbler’s signature texture.
  • Let the cobbler cool slightly before serving to allow it to set properly and avoid burns.
  • For a nuttier taste, lightly toast the pecans before adding them.
  • This recipe can be made ahead and reheated gently before serving.
