Peanut Butter Mixture
- 200g smooth or crunchy peanut butter
- 75g soft butter
- 200g icing sugar
- 75g Rice crispies
Chocolate Coating
- 300g dark or milk chocolate
Optional Decoration
- Prepare Peanut Butter Mixture: In a large bowl, beat together the peanut butter, soft butter, and icing sugar until the mixture is smooth and fully combined. Then gently fold in the Rice Krispies to retain their crunch.
- Form the Balls: Roll the mixture into walnut-sized balls using your hands. Place the formed balls onto a plate or tray and refrigerate them to firm up while you prepare the chocolate coating.
- Melt the Chocolate: Set a heatproof bowl over a pan of simmering water (double boiler method) and melt the chocolate gently until it is completely smooth and fluid. Stir occasionally to prevent burning.
- Coat Peanut Butter Balls: Using a fork, dip each chilled peanut butter ball into the melted chocolate, turning to coat evenly. Transfer them onto baking parchment-lined trays. Decorate with sprinkles immediately if desired, before the chocolate sets.
- Set the Chocolate: Place the coated balls back into the fridge for about 1 hour or until the chocolate hardens and sets completely.
Notes
- You can use either smooth or crunchy peanut butter based on your texture preference.
- If you prefer sweeter treats, use milk chocolate; for a less sweet option, use dark chocolate.
- Store the peanut butter balls in an airtight container in the refrigerator for up to one week.
- To speed up setting time, you can place the balls in the freezer for 15-20 minutes instead of fridge.
- Be gentle when folding in Rice Krispies to keep their crunch intact.
