Oven Baked Starbucks Egg Bites Recipe

4.7 from 71 reviews

These Oven Baked Starbucks Egg Bites are a delicious and protein-packed breakfast or snack option that mimic the popular coffee shop treat. Made with eggs, cottage cheese, bacon, and gruyere cheese, they are fluffy, savory, and easy to make at home using a steam bath in the oven for a creamy texture.

Ingredients

Scale

Egg Mixture

  • 9 large eggs
  • 1 and 1/2 cups cottage cheese
  • 1 teaspoon salt

Fillings

  • 6 strips cooked bacon, cut into halves then halves again (approx. 1/2 strip per muffin slot)
  • 2/3 cup shredded gruyere cheese

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C) and spray a 12-slot muffin tin with cooking spray to prevent sticking.
  2. Blend Egg Mixture: In a blender, combine the 9 large eggs, 1 and 1/2 cups cottage cheese, and 1 teaspoon salt. Blend until the mixture is completely smooth and homogenous to ensure a creamy texture.
  3. Assemble Egg Bites: Place approximately half a strip of cooked bacon (cut into smaller pieces) into each muffin slot. Sprinkle shredded gruyere cheese on top of the bacon evenly across all slots. Pour the blended egg and cottage cheese mixture evenly into each muffin tin slot, filling them up to nearly the top.
  4. Prepare Steam Bath: Place a baking sheet on the lowest rack of your oven. Boil water on the stovetop and carefully pour the boiling water onto the baking sheet to create steam inside the oven. This method helps keep the egg bites moist and tender during baking. Use proper heat-protective oven mitts to avoid burns.
  5. Bake the Egg Bites: Place the muffin tin on the middle rack of the oven and close the door. Bake for 25 minutes until the egg bites are set and lightly golden on top.
  6. Cool and Serve: Carefully remove the muffin tin from the oven. Turn off the oven and allow the baking sheet to cool before removing it. Let the egg bites cool slightly before gently removing them from the muffin tin. Serve warm and enjoy!

Notes

  • The steam bath is critical to achieve the creamy texture typical of Starbucks egg bites.
  • Make sure to use fresh eggs and well-drained cottage cheese for best results.
  • You can substitute gruyere cheese with Swiss or mozzarella if needed.
  • To reheat, microwave the egg bites for 30-45 seconds until warmed through.
  • For a vegetarian version, omit the bacon or replace it with sautéed mushrooms or spinach.
