Scale

Banana Bread Ingredients

  • 3 medium extra ripe bananas (dark streaked or brown)
  • 1 cup white granulated sugar
  • 2 large eggs, at room temperature
  • 1/2 cup canola oil (or vegetable oil)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract

Optional Add-ins

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup mini chocolate chips

Instructions

  1. Prepare the pan: Preheat your oven to 350°F (175°C). Spray a 9×5 inch loaf pan with nonstick cooking spray and line the bottom and two sides with parchment paper for easy removal.
  2. Mash the bananas: In a large mixing bowl, add the 3 extra ripe bananas. Using a fork, mash them thoroughly until mostly smooth. Mix in the sugar until combined.
  3. Add wet ingredients: Stir in the room temperature eggs, pure vanilla extract, and canola oil into the banana-sugar mixture. Mix well until everything is fully incorporated.
  4. Add dry ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the wet banana mixture. Stir just until all ingredients are combined; do not overmix to keep the bread tender.
  5. Add optional mix-ins (if using): Gently fold in chopped nuts or mini chocolate chips at this stage for extra texture and flavor.
  6. Bake: Pour the batter into the prepared loaf pan and smooth the top evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve: Allow the banana bread to cool completely in the pan before removing it by lifting the parchment paper. Slice and enjoy!

Notes

  • Use very ripe bananas with brown or black streaks for best sweetness and flavor.
  • Room temperature eggs beat better and mix more evenly with other ingredients.
  • Do not overmix the batter after adding the flour to prevent a dense bread.
  • Feel free to customize by adding nuts, chocolate chips, or even dried fruit.
  • Store leftover banana bread tightly wrapped at room temperature for up to 3 days or freeze for up to 2 months.
