Ingredients

Scale

Base Layer

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats

Chocolate Peanut Butter Filling

  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Prepare Baking Dish: Line an 8-inch or 9-inch square baking dish with parchment paper, allowing some overhang for easy lifting of bars later. You may use a 9×13-inch dish for thinner bars.
  2. Melt Butter and Sugar: In a large saucepan over medium heat, melt the butter and brown sugar together until the butter is fully melted and sugar dissolves completely. Stir in the vanilla extract.
  3. Add Oats: Mix the rolled oats into the butter-sugar mixture thoroughly.
  4. Cook Mixture: Lower the heat and cook the oat mixture for 3 to 4 minutes, stirring continuously until everything is well combined and heated through.
  5. First Oat Layer: Pour half of the oat mixture into the prepared baking dish and spread evenly, pressing down firmly to create a compact base layer. Reserve the remaining oat mixture.
  6. Prepare Chocolate-Peanut Butter Filling: In a small microwave-safe bowl, gently melt the chocolate chips and peanut butter together, stirring frequently until smooth and creamy.
  7. Layer Filling: Pour the melted chocolate mixture evenly over the oat base, reserving about 1/4 cup of the mixture for drizzling on top.
  8. Second Oat Layer: Evenly spread the remaining oat mixture over the chocolate layer, pressing gently to adhere. Drizzle the reserved chocolate mixture over the top for decoration.
  9. Chill: Refrigerate the assembled bars for 2 to 3 hours, or preferably overnight, to allow firm setting.
  10. Serve: Bring the bars to room temperature before lifting them out with the parchment paper and cutting into squares. Enjoy!

Notes

  • The texture of bars depends on how long you cook the sugar mixture; too short results in soft bars, too long can make them dry and crumbly.
  • Use parchment paper with overhang to easily lift bars from the pan without breaking.
  • For thinner bars, use a larger baking dish like 9×13 inches.
  • Store sealed in the refrigerator; they keep well for up to one week.
  • These bars are best served at room temperature for optimal texture and flavor.
