Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 68 oz each)

Filling

  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese, softened
  • 1 tablespoon ranch seasoning mix (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Seasoning & Cooking

  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep the Chicken: Preheat your oven to 375°F (190°C). Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through, creating space for the creamy filling.
  2. Make the Filling: In a medium bowl, combine shredded mozzarella, softened cream cheese, ranch seasoning mix, garlic powder, and onion powder. Stir until smooth and well combined.
  3. Stuff the Chicken: Spoon the cheese mixture evenly into each chicken breast pocket. Secure the opening with toothpicks if needed. Season the outside of each breast with salt and black pepper.
  4. Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes on each side until golden brown and crisp, locking in flavor.
  5. Bake: Transfer the skillet to the oven and bake for 20–25 minutes until the internal temperature of the chicken reaches 165°F (74°C) and the cheese inside is melted and bubbly.
  6. Serve: Remove toothpicks, garnish with chopped fresh parsley, and serve hot, enjoying the juicy, cheesy stuffed chicken breasts.

Notes

  • Ensure not to cut all the way through the chicken breasts to hold the filling inside.
  • If you don’t have an oven-safe skillet, transfer the seared chicken to a baking dish before baking.
  • Use a meat thermometer to confirm the chicken is fully cooked at 165°F (74°C) for food safety.
  • For extra flavor, try adding chopped jalapeños or cooked bacon to the filling.
  • Leftover chicken can be refrigerated for up to 3 days and reheated gently to maintain juiciness.
