Instructions

  1. Crush Cookies and Nuts: Place the animal crackers and walnut pieces into a sealable plastic bag. Using a rolling pin, gently crush them into smaller pieces. Set this mixture aside. Line a baking tray with plastic wrap, leaving an inch or two of overhang for easy wrapping later.
  2. Separate Eggs and Prepare Egg Whites: Carefully separate the egg whites from the yolks. Put the yolks aside for now. In a mixing bowl, add the egg whites with the salt.
  3. Whip Egg Whites: Using a mixer on medium speed, whisk the egg whites until they become white and foamy. Gradually add half a cup of powdered sugar while continuing to whisk until the mixture is thick, glossy, and forms soft peaks.
  4. Prepare Chocolate Mixture: Melt the butter either in the microwave or over low heat in a saucepan. Remove it from heat. To the melted butter, add the remaining 1 1/2 cups powdered sugar, cocoa powder, vanilla extract, and orange extract or cognac. Stir well to combine. Whisk the reserved egg yolks into this chocolate mixture until fully incorporated.
  5. Combine Mixtures: Gently fold the chocolate mixture into the whipped egg white meringue using a spatula. Use light, circular motions to blend until partially combined. Then, add the crushed cookies and walnuts and fold them in thoroughly to create an even mixture.
  6. Shape the Mosaiko: Pour the mixture onto the prepared baking tray, forming a long strip down the center. Using the overhanging plastic wrap, carefully pull the edges over the mixture to form a wrapped roll, or divide the mixture into two smaller logs if preferred.
  7. Chill to Set: Place the wrapped roll in the freezer for 30 minutes. Remove it and reshape into a long log if it has flattened. Return it to the refrigerator or freezer for an additional 90 minutes, or until it is firm and set.
  8. Serve: Once set, remove the plastic wrap and dust the log(s) generously with powdered sugar to mimic the appearance of salami. Serve in thick slices with coffee or a scoop of vanilla ice cream. Store any leftovers wrapped tightly in the refrigerator.
