Tortillas

  • 3 burrito style tortillas
  • Small amount of oil (for cooking)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix gently until the ingredients are evenly distributed.
  2. Assemble the quesadillas: Place one tortilla on a flat surface and spread approximately one-third of the filling on one half of the tortilla. Fold the other half over the filling, creating a half-moon shape. Repeat this step with the remaining tortillas and filling.
  3. Heat the pan: Warm a small amount of oil in a large flat pan or griddle over medium heat to prevent sticking and aid browning.
  4. Cook the quesadillas: Place one folded tortilla in the heated pan. Cook for 3 to 4 minutes, pressing down gently with a spatula, until the bottom side is lightly browned and the cheese starts to melt. Flip carefully and cook the other side for another 3 to 4 minutes until browned and cheese is fully melted. Repeat with the remaining quesadillas.
  5. Serve: Remove quesadillas from the pan and let them cool briefly. Cut each quesadilla into four slices. Serve with your choice of toppings such as sour cream, salsa, or pico de gallo.
