Bell Peppers
Filling
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 1 pound lean ground beef
- 2 tablespoons low-carb taco seasoning
- 1 can (15 ounces) diced tomatoes in their juice
- 1 cup steamed cauliflower rice
- 2 cups grated cheese, split
- Prepare the Oven and Bell Peppers: Preheat your oven to 190°C (375°F) and lightly grease a large baking dish. Slice the tops off the bell peppers, remove the seeds and membranes, then cut each pepper in half. Arrange the pepper halves cut side up in the baking dish.
