  • 2 pounds Ground Chicken or lean pork/turkey
  • 1 cup Parmesan Cheese, shredded
  • 1 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Minced Garlic
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Whole Milk (or plant-based milk)

Glaze

  • 2 tablespoons Unsalted Butter
  • 4 cloves Minced Garlic (for glaze)
  • 1/4 cup Additional Parmesan
  • 2 tablespoons Fresh Parsley

Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper or grease a loaf pan to prepare it for baking.
  2. Mix Ingredients: In a large bowl, combine ground chicken, shredded Parmesan, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and milk. Mix gently until all ingredients are just combined, being careful not to overwork the mixture to keep the meatloaf tender.
  3. Shape Meatloaf: Shape the mixture into a loaf form and place it on the prepared baking sheet or inside the loaf pan.
  4. Bake: Bake the meatloaf in the preheated oven for 40 to 45 minutes, or until the internal temperature reaches 74°C (165°F), ensuring it’s safely cooked through.
  5. Prepare Glaze: While the meatloaf is baking, melt the unsalted butter in a saucepan over medium heat. Add the minced garlic and cook until fragrant. Stir in the additional Parmesan cheese and chopped fresh parsley until the mixture thickens slightly to form a flavorful glaze.
  6. Glaze Meatloaf: Remove the meatloaf from the oven, brush the garlic Parmesan glaze evenly over the top of the meatloaf, then return it to the oven for an additional 5 to 7 minutes to let the glaze set.
  7. Rest and Serve: Remove the meatloaf from the oven and let it rest for 5 minutes. Slice it and garnish with fresh parsley before serving to add freshness and color.
