Cheese

  • 1/4 cup red onions, thinly sliced
  • Iceberg lettuce, chopped (about 1 cup)

Seasonings & Dressing

  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • 1 teaspoon red wine vinegar

Instructions

  1. Preheat Oven: Preheat your oven’s broiler to high to prepare for melting the cheese on the meat slices.
  2. Lay Out Meat: Arrange 2 slices of deli meat on a baking sheet without overlapping (traditional combo is ham, mortadella, and capicola, or simply ham slices).
  3. Add Cheese: Sprinkle shredded provolone evenly over the top of the meat slices.
  4. Broil: Place the baking sheet under the broiler for 2-4 minutes until the cheese melts. Watch closely as it can burn quickly at this temperature.
  5. Prepare Other Ingredients: While cheese melts, chop the iceberg lettuce, slice pepperoncinis and red onions, and cut salami slices in half.
  6. Make Dressing: In a small bowl, whisk together red wine vinegar, olive oil, and dried oregano to form a simple dressing.
  7. Assemble Roll Ups: Once cheese is melted, place 2 pieces of halved salami over cheese, brush with the dressing, and sprinkle with pepperoncinis, red onions, and chopped lettuce on one half of the meat to make rolling easier.
  8. Roll and Set: Let meat cool just enough to handle, then roll each piece tightly, seam side down, on a plate. Allow the cheese to harden and act as glue.
