This Italian Sausage Soup is a hearty and comforting dish featuring crumbled Italian sausage, tender ditalini pasta, and a creamy tomato broth enriched with cream cheese and Parmesan. With the fragrant seasoning of garlic, onion, and fresh basil, it’s perfect for a satisfying meal that combines rich flavors and easy preparation.

Ingredients

Scale

Meat

  • 1 lb Italian sausage

Vegetables & Aromatics

  • 1/2 cup diced onion
  • 2 cloves minced garlic
  • 1/4 cup fresh basil, chopped

Seasonings

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Liquids & Canned Goods

  • 4 cups chicken broth
  • 1 (14.5 ounces) can petite diced tomatoes

Pasta & Cheeses

  • 8 ounces ditalini pasta
  • 8 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the Sausage: Place the Italian sausage in a large Dutch oven or pot over medium heat. Brown and crumble the sausage until it is cooked through, about 5-7 minutes. Drain off any excess grease to avoid a greasy soup base.
  2. Sauté Aromatics and Seasonings: Stir in the diced onion, Italian seasoning, salt, and black pepper into the pot. Cook for 1-2 minutes until the onions are softened and the spices are fragrant.
  3. Add Garlic: Add the minced garlic to the pot and stir continuously for about 1 minute, making sure the garlic does not burn but releases its aroma.
  4. Add Liquids and Pasta: Pour in the petite diced tomatoes with their juice, chicken broth, and ditalini pasta. Stir to combine, ensuring that the pasta is fully submerged in the broth. Bring the mixture to a boil.
  5. Cook the Pasta: Once boiling, reduce heat and cook for about 8 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
  6. Create Creamy Base: Lower the heat to medium and stir in the softened cream cheese and grated Parmesan cheese. Continue cooking and stirring for about 5 minutes until the cheeses melt completely and the soup becomes creamy and smooth.
  7. Garnish and Serve: Serve the soup hot, generously topped with freshly chopped basil for a bright, fresh finish.

Notes

  • Use mild or spicy Italian sausage depending on your heat preference.
  • For a lower-fat version, use turkey Italian sausage and reduced-fat cream cheese.
  • Fresh basil can be substituted with dried basil, but add it earlier with other seasonings.
  • This soup can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
  • For a gluten-free option, substitute the ditalini pasta with gluten-free pasta.
