Soup Base
- 2 14.5 oz cans of tart cherries (with liquid)
- 1 lemon slice
- 1 1/2 tbsp maple syrup
Thickening Mixture
- 1/4 cup coconut yogurt (plus more for serving if desired)
- 2 1/2 tsp arrowroot starch
To Serve
- Simmer Cherries: Add the tart cherries with their liquid, lemon slice, and maple syrup to a pot. Stir to combine and place over low heat. Bring to a gentle simmer and cook for 5 minutes to reduce the liquid slightly and soften the cherries.
- Prepare Thickener and Combine: In a small bowl, whisk together the coconut yogurt and arrowroot starch until smooth. Spoon this mixture into the simmering cherry soup and stir well. Continue to simmer gently on low heat for an additional 2 to 3 minutes until slightly thickened.
- Cool Soup: Remove the pot from heat and discard the lemon slice. Allow the soup to cool to room temperature before transferring it to the refrigerator to chill thoroughly.
- Serve Chilled: Once the soup is fully chilled, ladle it into bowls. Garnish with fresh dill and a dollop of coconut yogurt if desired. Serve cold for a refreshing experience.
Notes
- Use tart cherries for the best authentic flavor; fresh or frozen can be a substitute but will require adjustments in cooking time.
- Arrowroot starch is used as a gluten-free thickener; cornstarch can be substituted if preferred.
- For a creamier texture, add more coconut yogurt during serving.
- Dill garnish adds a unique herbal note but can be omitted according to taste.
- This soup can be made a day ahead to enhance flavor blending.
