Ingredients

Scale

Eggs

  • 8 large eggs

Dressing

  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional, adjust to taste)
  • 1 teaspoon paprika (plus extra for garnish)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper (to taste)

Add-ins

  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon (crumbled)
  • 2 green onions (finely chopped)

To Serve

  • Crackers, chips, or toasted bread slices

Instructions

  1. Cook the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a rolling boil on the stovetop.
  2. Set the Eggs: Once boiling, turn off the heat, cover the saucepan, and let the eggs sit undisturbed for 10 to 12 minutes to fully cook through.
  3. Cool and Peel: Drain the hot water and cool the eggs under cold running water. Peel the eggs and chop them into small pieces.
  4. Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Stir until the dressing is smooth and well blended.
  5. Combine Eggs and Dressing: Add the chopped eggs to the dressing mixture and stir gently until all the egg pieces are evenly coated.
  6. Add Cheese and Bacon: Mix in the shredded sharp cheddar cheese and half of the crumbled bacon, ensuring even distribution.
  7. Prepare to Bake: Preheat the oven to 350°F (175°C). Grease a baking dish to prevent sticking.
  8. Bake the Dip: Spread the egg mixture evenly into the greased baking dish. Bake uncovered for 15 to 20 minutes until the dip is hot, bubbly, and golden.
  9. Garnish: Remove from the oven and sprinkle the remaining bacon, chopped green onions, and a pinch of paprika over the top.
  10. Serve: Serve the dip warm alongside crackers, chips, or toasted bread slices for a delicious appetizer experience.

Notes

  • For a spicier dip, increase the amount of hot sauce or add a pinch of cayenne pepper.
  • Make sure the eggs are fully cooled before peeling to prevent tearing the whites.
  • This dip can be prepared ahead of time and baked just before serving to save time.
  • Use sharp cheddar for a more pronounced cheesy flavor.
  • Bacon can be substituted with cooked pancetta or omitted for a meatless version.
