Ingredients

Scale

Ham

  • 810 pounds bone-in spiral ham
  • 2 cups water

Brown Sugar Glaze

  • 1 cup packed light brown sugar
  • ½ cup honey
  • ⅓ cup orange juice
  • ¼ cup Dijon mustard
  • 1 teaspoon ground mustard
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon cloves

Instructions

  1. Preheat Oven: Preheat your oven to 300 degrees Fahrenheit to prepare for slow-cooking the ham.
  2. Prepare Ham: Unpack the ham and rinse it thoroughly under cold water. Pat the ham dry completely using paper towels.
  3. Place Ham in Baking Dish: Set the ham in a 9×13-inch baking pan and pour 2 cups of water into the pan to create moisture during cooking.
  4. Slow Cook the Ham: Cover the pan tightly with aluminum foil and bake for 1 ½ to 2 hours, or about 10-12 minutes per pound, until the internal temperature reaches 120 degrees Fahrenheit.
  5. Make the Brown Sugar Glaze: While the ham cooks, combine brown sugar, honey, orange juice, Dijon mustard, ground mustard, cinnamon, black pepper, ginger, and cloves in a saucepan over medium heat.
  6. Simmer the Glaze: Stir the mixture until fully combined, bring it to a boil, then reduce to a simmer and cook for 3 to 4 minutes until slightly thickened.
  7. Reserve Some Glaze: Set aside ¼ cup of glaze for reheating the ham later to keep it moist.
  8. Increase Oven Temperature: Once the ham reaches 120°F, remove it from the oven and increase the oven temperature to 425 degrees Fahrenheit.
  9. Apply First Glaze: Brush or spoon a generous amount of the glaze over the ham, but don’t use it all. This will create the initial caramelized coating.
  10. Bake at High Heat: Return the glazed ham to the oven uncovered and bake for 15 minutes to start caramelizing the glaze.
  11. Apply Second Glaze: Remove the ham and glaze it again to build up the rich, sticky coating. Watch carefully to prevent burning.
  12. Final Bake: Bake the ham for an additional 15 minutes at 425°F until the glaze is bubbly and caramelized. If the bone browns too quickly, tent loosely with a small piece of foil.
  13. Rest the Ham: Take the ham out of the oven and let it rest for 15 minutes to allow juices to redistribute.
  14. Serve: Transfer the ham to a cutting board, slice, and serve with remaining glaze if desired.

Notes

  • The internal temperature target before glazing is 120°F; during the last bake at high heat the ham will reach a safe serving temperature.
  • Reserving some glaze before applying helps keep the ham moist when reheated later.
  • Keep an eye on the glaze during the high-heat baking step to avoid burning due to the sugar content.
  • Covering the bone with foil during caramelization prevents over-browning and ensures even cooking.
