Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and cover a cookie sheet with aluminum foil for easy cleanup.
  2. Prepare and Roast Squash: Brush the cut sides of the butternut squash with ½ tablespoon olive oil and season with a pinch of salt, pepper, ½ teaspoon thyme, and ½ teaspoon rubbed sage. Place the squash cut side down on the foil-lined cookie sheet. Add the peeled garlic cloves and shallot to the pan, tossing them lightly in olive oil. Roast everything in the oven for 40-45 minutes, or until the squash is tender. Remove and set aside to cool.
  3. Prepare Soup Base: In a large soup pan, combine the bone broth with 1/8 teaspoon cumin, ¼ teaspoon nutmeg, 1 teaspoon salt, ¼ teaspoon black pepper, ½ teaspoon dried thyme, ½ teaspoon rubbed sage, and 1 tablespoon honey. Stir to mix the flavors.
  4. Remove Squash and Add to Soup: Once cooled, peel the roasted butternut squash and cut it into cubes. Add the roasted squash, garlic, and shallot to the soup base. Bring the soup to a simmer over medium heat and cook for 10 minutes to allow the flavors to meld. Then remove the pan from heat.
  5. Add Cottage Cheese and Puree: Stir in the small curd cottage cheese into the warm soup. Use an immersion blender directly in the pot, or carefully transfer the soup in batches to a blender to puree until smooth and creamy. Adjust seasoning if needed and serve warm.
