A delicious and healthy high-protein apple crisp made with plant-based protein powder, oats, and nut butter. This recipe offers a nutritious twist on a classic dessert, combining tender cinnamon-spiced apples with a crunchy oat topping, perfect for a satisfying snack or dessert that supports a protein-rich diet.

Ingredients

Scale

Apple Mixture

  • 1/2 cup chopped apple (diced small for even cooking)
  • 1/4 tsp cinnamon
  • 1 tbsp vanilla protein powder (plant-based)
  • 1 drop lemon juice

Crumble Topping

  • 1/4 cup oats (rolled oats preferred)
  • 1 tbsp nut butter (almond or peanut butter)
  • 1 tbsp vanilla protein powder (plant-based)
  • 1 tsp milk or water
  • 1 pinch salt

Instructions

  1. Prepare Oven and Apples: Preheat your oven to 350°F (175°C). In a bowl, combine the chopped apples, cinnamon, lemon juice, and 1 tablespoon of vanilla protein powder. Stir thoroughly to ensure the apples are well coated with the mixture. Transfer this apple mixture to a small ramekin, spreading it out evenly.
  2. Make the Crumble Topping: In a separate bowl or mug, mix together the oats, nut butter, remaining 1 tablespoon of vanilla protein powder, milk or water, and a pinch of salt. Use a fork or spoon to combine all ingredients until a crumbly mixture forms. If the mixture appears too dry and doesn’t bind, add a small extra amount of milk or water to help it hold together.
  3. Assemble and Bake: Sprinkle the oat crumble mixture evenly over the apples in the ramekin. Place the ramekin in the preheated oven and bake for approximately 20 minutes, or until the topping turns golden and the apple mixture is bubbling beneath.
  4. Cool and Serve: Remove the ramekin from the oven and allow it to cool slightly before serving. For an added indulgence, top with your favorite ice cream, whipped cream, or an extra drizzle of nut butter. Enjoy your warm, oven-baked high protein apple crisp!

Notes

  • Use plant-based protein powder to keep the recipe vegan and boost protein content.
  • Almond butter gives a richer flavor, but peanut butter is a good substitute.
  • The lemon juice helps to prevent apple browning and enhances flavor.
  • Adjust liquid quantity to achieve the correct crumble texture.
  • This dish can be served warm or at room temperature.
