Ingredients

Scale

Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 23 garlic cloves (minced)
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (adjust to taste)
  • 2 tsp cornstarch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (adjust to spice preference)
  • 1 tsp rice vinegar
  • 2 tsp honey

Rice Bowl Toppings

  • Rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey. Whisk well until smooth. Taste and adjust the spice level by adding more sriracha or balance sweetness with additional honey or sweet chili sauce. Refrigerate the sauce until ready to serve to let flavors meld.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Once shimmering, add ground turkey and break it into small pieces using a spatula or wooden spoon. Cook until the turkey is fully browned and reaches an internal temperature of 165°F, about 6-8 minutes.
  3. Add Flavorings and Simmer: Reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer the mixture for 2-3 minutes, stirring occasionally to combine the flavors.
  4. Thicken the Sauce: Sprinkle cornstarch evenly over the turkey mixture and stir well to incorporate. This will thicken the sauce slightly. Optional: stir in 2 tablespoons of the prepared bang bang sauce to the turkey mixture for added flavor just before serving.
  5. Assemble the Bowls: In serving bowls, layer a base of cooked rice and top with shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado slices, shredded cabbage, and any other desired fresh toppings. Add the cooked ground turkey mixture on top, then drizzle generously with bang bang sauce. Garnish with sliced green onions and sesame seeds for a final touch.

Notes

  • Adjust the level of spiciness by varying the amount of sriracha in both the ground turkey and bang bang sauce.
  • Use low sodium soy sauce to keep the sodium content moderate.
  • If desired, swap ground turkey for ground chicken or lean ground beef.
  • The bang bang sauce can be prepared ahead and stored in the refrigerator for up to 3 days.
  • Serve with steamed jasmine or brown rice for a wholesome meal.
