For the Beef Filling

  • ½ teaspoon black pepper
  • ½ cup canned black beans (optional)
  • ½ cup corn kernels (optional)
  • 1 cup shredded cheddar cheese

For the Enchiladas

  • 8 small flour or corn tortillas
  • 2 cups enchilada sauce (homemade or store-bought)
  • 1 ½ cups shredded Monterey Jack or cheddar cheese
  • 1 tablespoon olive oil (for greasing the baking dish)

For Garnish and Serving

  • ¼ cup chopped fresh cilantro
  • ½ cup diced tomatoes
  • ¼ cup sour cream or Greek yogurt
  • Sliced jalapeños (optional, for spice)
  • 1 lime, cut into wedges

Instructions

  1. Prepare the Beef Filling: Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking for 5-7 minutes until the beef is browned and cooked through. Stir in minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 1-2 minutes until fragrant. If desired, mix in black beans and corn. Remove from heat and set aside.
  2. Preheat the Oven & Prepare the Baking Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil to prevent sticking.
  3. Assemble the Enchiladas: Pour half a cup of enchilada sauce into the bottom of the baking dish and spread evenly. Place a tortilla flat on a work surface and spoon approximately ¼ cup of the beef mixture into the center. Sprinkle some shredded cheddar cheese over the beef. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat this process with the remaining tortillas and filling.
  4. Add Sauce & Cheese: Pour the remaining enchilada sauce evenly over the rolled enchiladas in the dish. Sprinkle shredded Monterey Jack or cheddar cheese evenly over the top to ensure melted cheesy goodness.
  5. Bake the Enchiladas: Cover the baking dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 5-10 minutes until the cheese has melted and is bubbly with slight golden spots.
  6. Garnish and Serve: Remove the enchiladas from the oven and sprinkle with fresh cilantro and diced tomatoes. Add a dollop of sour cream or Greek yogurt on top and some sliced jalapeños if you want extra spice. Serve immediately with lime wedges on the side for a fresh, tangy zing.
