Ingredients

Scale

Pasta

  • 8 oz dry macaroni noodles

Vegetables and Eggs

  • ½ cup finely diced sweet gherkins
  • ¾ cup finely diced red bell pepper
  • ⅓ cup thinly sliced celery
  • ⅓ cup finely diced red onion
  • 2 large hard-boiled eggs, finely diced

Dressing

  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red wine vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook Macaroni: Boil the macaroni noodles in salted water until they are al dente, which usually takes about 8 to 10 minutes. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and cool them down. Toss the drained noodles gently with a little olive oil to prevent sticking.
  2. Combine Salad Ingredients: In a large mixing bowl, add the cooled macaroni noodles along with the finely diced sweet gherkins, red bell pepper, celery slices, diced red onion, and hard-boiled eggs. Mix gently to distribute the ingredients evenly.
  3. Prepare Dressing: In a separate bowl, whisk together the mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until the dressing is smooth and well combined.
  4. Mix Salad and Dressing: Pour the prepared dressing over the macaroni mixture. Toss everything gently but thoroughly to ensure that the noodles and vegetables are evenly coated with the creamy dressing.
  5. Chill and Serve: Cover the salad with plastic wrap or a lid and refrigerate it for at least 1 hour to allow the flavors to meld. Before serving, stir the salad again and taste to adjust seasoning or add extra dressing if desired.

Notes

  • For best texture, do not overcook the macaroni; it should be tender but still firm.
  • Adjust the sweetness of the salad by varying the sugar and sweet pickle juice according to your taste.
  • This salad tastes even better if made a few hours ahead, allowing flavors to develop.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To add extra crunch, consider adding chopped celery seeds or toasted nuts as garnish.
