  • ¾ cup dry white wine
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the Sauce Mixture: Combine chicken broth, heavy cream, Worcestershire sauce, mustard powder, honey, chicken bouillon cube, onion powder, oregano, basil, and parsley in a large measuring cup or bowl with a spout. Set aside. Measure out all remaining ingredients before you start cooking to keep the process smooth.
  2. Slice and Pound the Chicken: Slice each chicken breast lengthwise to create 2-3 thinner slices. Cover them with plastic wrap and use the textured side of a meat mallet to pound the chicken to about ½ inch thickness for even cooking and tenderness.
  3. Season the Chicken: Generously season both sides of each chicken slice with salt, pepper, and 2 teaspoons of parsley to build the flavor base.
  4. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the chicken slices for 4-5 minutes per side until an attractive golden crust forms. Remove the chicken and set aside on a plate.

  7. Make the Roux: Add the butter and flour to the skillet and stir continuously to form a roux. Cook for 1-2 minutes to eliminate the raw flour taste, which will thicken the sauce beautifully.
  8. Add Sauce Mixture: Gradually add the prepared sauce mixture in small splashes, stirring constantly to avoid lumps. Bring the mixture to a boil, then reduce heat to a simmer. Let it simmer and reduce for about 8 minutes to develop a creamy consistency.
  9. Incorporate Cheese and Lemon: Lower the heat to low. Gradually sprinkle in the freshly grated Parmesan cheese, stirring continuously to melt it smoothly into the sauce. Add fresh lemon juice and stir well to brighten the flavor.
  10. Finalize and Serve: Return the seared chicken to the skillet, spoon the sauce over each piece, and heat through for about 5 minutes or until the sauce thickens to your liking. Garnish with fresh parsley and serve hot alongside mashed potatoes and roasted vegetables.
