  • 1.5 teaspoons salt
  • 6 tbsp unsalted butter, softened at room temperature (85g)

Egg Wash:

  • 1 egg yolk
  • 1 tablespoon milk

Garlic Butter:

  • ¼ cup salted butter (57g)
  • 23 garlic cloves, finely chopped
  • 12 tablespoons freshly chopped parsley

Instructions

  1. Activate Yeast: In a large bowl, stir together the warm milk with the yeast until dissolved and let it activate for about 5 minutes until foamy.
  2. Mix Ingredients: Add sugar, flour, egg, salt, and softened butter to the bowl with the yeast mixture. Stir the ingredients together until a shaggy dough forms.
  3. Knead Dough: Turn the dough onto a clean surface and knead for 15 minutes using a push-pull motion. The dough will become smooth, elastic, and pass the window-pane test, indicating it is ready.
  4. First Rise: Transfer the dough to a large lightly oiled bowl, cover with cling wrap, and place in a warm, humid spot to rise until doubled in size, about 90 minutes.
  5. Shape Rolls: Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a smooth, tight ball ensuring no wrinkles or cracks.
  6. Prepare for Second Rise: Line a 9×13″ baking sheet with parchment paper and arrange the rolls with even space. Brush rolls generously with egg wash made from the egg yolk and milk.
  7. Second Rise: Let the rolls rise again in a warm place for 30-45 minutes until puffy.
