  • 2 cups long-grain white rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14 oz) diced tomatoes with juices
  • 1 onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder

  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly spray a baking dish with nonstick cooking spray to prevent sticking.
  2. Cook Rice: Prepare the rice by cooking it according to the package instructions until it is tender and fluffy.
  3. Sauté Onion: While the rice cooks, heat a skillet over medium heat and sauté the diced onion until it becomes translucent and fragrant.
  4. Mix Ingredients: In a large mixing bowl, combine the cooked rice, rinsed black beans, diced tomatoes including their juices, sautéed onion, cumin, chili powder, and half of the shredded cheddar cheese. Stir well to evenly distribute all ingredients.
  5. Assemble Casserole: Transfer the rice and bean mixture into the prepared baking dish. Evenly sprinkle the remaining shredded cheddar cheese over the top of the mixture.
  6. Bake: Place the baking dish in the preheated oven and bake for approximately 25 minutes, or until the cheese has melted completely and appears bubbly and lightly golden.
