Instructions

  3. Arrange potatoes and shallots: Stand the potato slices vertically in the baking dish, packing them snugly together to form a layered pattern. Wedge the thickly sliced shallots evenly throughout the potatoes for bursts of sweetness and aroma.
  4. Season and brush: Sprinkle coarse salt evenly over the potatoes and shallots. If using red-pepper flakes, sprinkle them now to add a gentle heat. Then brush the remaining butter and olive oil mixture over the top of the potatoes and shallots to promote browning and crispness.
