Ingredients

Scale

Chicken

  • 2 Boneless Skinless Chicken Breasts (cooked & diced)
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt and Black Pepper (to taste)
  • Olive Oil (for cooking)

Vegetables

  • 2 Celery Stalks (finely diced)
  • 2 Carrots (finely diced)
  • ½ Yellow Onion (finely diced)

Sauce and Base

  • 5 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 8 ounces Orzo Pasta
  • 2 cups Chicken Broth
  • ½ cup Heavy Whipping Cream
  • 1 teaspoon Chicken Bouillon Powder
  • ⅓ cup All Purpose Flour

Instructions

  1. Cook the Orzo and Prepare Chicken: Cook the orzo pasta according to the package instructions until al dente. Meanwhile, season the chicken breasts all over with onion powder, garlic powder, paprika, salt, and black pepper. Heat a splash of olive oil in a skillet over medium-high heat and cook the chicken until it reaches an internal temperature of 165°F (74°C). Once cooked, dice the chicken into bite-sized pieces.
  2. Sauté Vegetables and Make Roux: In a large skillet over medium-high heat, melt the butter with olive oil. Add the finely diced onion, carrots, and celery. Sauté for 4-5 minutes until the vegetables are tender but still slightly crisp. Reduce the heat to low and sprinkle the all-purpose flour evenly over the vegetables. Whisk continuously to form a smooth paste or roux.
  3. Prepare Creamy Sauce: Continue stirring the roux for 2-3 minutes to cook out the raw flour taste. Slowly pour in the chicken broth along with the heavy whipping cream while whisking constantly to avoid lumps. Keep whisking until the mixture thickens into a smooth, creamy sauce.
  4. Combine Chicken, Orzo and Sauce: Add the diced cooked chicken to the creamy vegetable sauce. Simmer gently until the mixture thickens to your preferred consistency. Drain the cooked orzo pasta and stir it into the creamy chicken and vegetable mixture, ensuring everything is evenly combined.
  5. Serve and Enjoy: Serve the creamy chicken pot pie orzo warm. This dish pairs well with a simple green salad or steamed green vegetables for a complete meal.
