Instructions

  1. Cook Pasta: Cook 1 (12-ounce) box of bowtie pasta until al dente according to the package instructions. Drain well and set aside.
  2. Brown Ground Beef: In a large skillet over medium-high heat, cook 1 pound lean ground beef until browned and cooked through, approximately 7-10 minutes. Season with salt and pepper to taste. Drain any excess fat.
  3. Combine Salad Ingredients: In a large serving bowl, toss together the cooked pasta, browned ground beef, 1 cup cooked and crumbled bacon, 1 cup halved grape tomatoes, 1 can (14.5 ounces) drained corn, 1 can (14.5 ounces) drained and rinsed black beans, 8 ounces cubed cheddar cheese, 1 large diced red bell pepper, 1 bunch chopped green onions, and 1 diced jalapeno.
  4. Prepare Dressing: In a medium bowl, whisk together 1¼ cups mayonnaise, ½ cup BBQ sauce, 1 tablespoon Worcestershire sauce, 1 teaspoon chili powder, and 1 teaspoon ground cumin until smooth and well combined.
  5. Toss Salad and Serve: Pour the dressing over the combined salad ingredients and toss gently until everything is evenly coated. Garnish with chopped cilantro and serve immediately. If not serving right away, keep the dressing separate and add just before serving to maintain freshness.
