Ingredients

Scale

Main Ingredients

  • 1.5 cups cottage cheese
  • 4 large eggs
  • 1 cup rolled old fashioned oats
  • 1 banana
  • 3/4 cup canned pumpkin puree
  • 1/3 cup maple syrup
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 cup chopped pecans

Instructions

  1. Preheat and prepare bowls: Preheat your oven to 350°F (175°C). Lightly spray two 2-cup glass bowls with non-stick cooking spray and place them on a large baking sheet to catch any drips during baking.
  2. Blend ingredients: In a high-powered blender, combine the cottage cheese, eggs, rolled oats, banana, pumpkin puree, maple syrup, cinnamon, pumpkin pie spice, and baking powder. Blend until smooth, which may take a few minutes. The batter will be thick but still pourable.
  3. Fill bowls and add pecans: Evenly divide the batter into the prepared bowls, filling each about two-thirds full. Sprinkle the chopped pecans evenly over the top of each bowl.
  4. Bake the bowls: Transfer the baking sheet with bowls into the oven and bake for 35 to 40 minutes, or until the tops are golden brown, puffed up, and firm to the touch. Oven times may vary, so check for doneness.
  5. Cool and store: Remove the bowls from the oven and allow them to cool for at least 10 minutes before serving. For meal prep, cover the bowls with lids and store in the refrigerator for up to one week.

Notes

  • Use ripe bananas for natural sweetness and better flavor.
  • High-powered blender is recommended to achieve a smooth batter.
  • You can substitute pecans with walnuts or almonds if preferred.
  • These bowls can be reheated in the microwave for about 1-2 minutes before eating.
  • If you want to make more servings, simply double or triple the recipe and bake in additional bowls.
