Ingredients

Scale

Streusel

  • 3 tbsp unsalted butter, cold
  • 1/2 cup brown sugar
  • 1/2 cup all purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp salt

Banana Bread

  • 1/2 cup unsalted butter, softened
  • 1 1/4 cup granulated sugar
  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup very ripe mashed bananas (about 2 large bananas)
  • 3/4 cup buttermilk, at room temperature
  • 1 3/4 cups all purpose flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 3/4 tsp salt

Instructions

  1. Prepare the Streusel: In a small bowl, combine the cold butter, flour, brown sugar, cinnamon, and salt. Use your fingers to mash everything together until the mixture forms large crumbles. Chill the streusel in the refrigerator while you prepare the banana bread batter.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper. The parchment paper is essential to ensure the banana bread bakes properly and comes out of the pan easily.
  3. Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy.
  4. Add Eggs and Vanilla: Mix in the eggs and vanilla extract, continuing to beat for about one minute until the mixture becomes pale and fluffy.
  5. Incorporate Bananas and Buttermilk: Fold in the mashed bananas and buttermilk until fully combined with the batter.
  6. Add Dry Ingredients: Sift in the flour, cinnamon, baking soda, and salt. Mix until thoroughly combined, but avoid overmixing to keep the bread tender.
  7. Transfer Batter to Pan: Pour the banana bread batter into the prepared loaf pan, spreading it evenly.
  8. Top with Streusel: Sprinkle the chilled streusel evenly over the entire surface of the batter.
  9. Bake: Bake the banana bread for 60 to 70 minutes or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
  10. Cool: Allow the bread to cool in the pan for 30 minutes until it’s cool enough to handle.
  11. Remove and Cool Completely: Transfer the loaf to a cooling rack and let it cool completely for the best texture and flavor, though it can also be enjoyed warm.
  12. Storage: Store any leftovers in an airtight container at room temperature for up to three days to keep the bread fresh.

Notes

  • Make sure to use very ripe bananas for the best flavor and natural sweetness.
  • Do not skip the parchment paper in the loaf pan to prevent sticking and ensure proper baking.
  • Chilling the streusel before baking helps keep the crumbly texture intact during baking.
  • The banana bread tastes best once completely cooled, but it can also be enjoyed warm.
  • Store the bread in an airtight container to maintain freshness for up to three days.
