Instructions

  1. Prepare the Fondant Mixture: In a mixing bowl, combine the unsalted butter, light corn syrup, kosher salt, and powdered sugar. Stir and mix until the mixture is smooth and forms a dough-like consistency.
  2. Knead the Dough: Knead the mixture on a clean surface until it becomes a smooth, pliable dough. If the dough is too soft to handle, refrigerate it until it firms up.
  3. Wrap the Cherries: Flatten small portions of the dough into circles large enough to cover each cherry. Wrap each stem-removed maraschino cherry tightly with the dough.
  4. Chill Wrapped Cherries: Place the dough-wrapped cherries on a cookie sheet lined with wax paper. Chill them in the refrigerator for at least 2 hours or preferably overnight to set the fondant.
  5. Dry the Cherries: Remove cherries from the refrigerator, drain any excess liquid, and pat them dry using paper towels to prepare for dipping.
  6. Melt Chocolate Coating: Using a double boiler or a bowl set over simmering water, melt the unsweetened chocolate, semi-sweet chocolate chips, and paraffin wax together. Stir continuously until smooth and fully combined.
  7. Dip the Cherries: Using forks or dipping tools, dip each fondant-wrapped cherry into the melted chocolate mixture, ensuring complete coverage.
  8. Cool and Set: Lift the cherries from the chocolate, tap off excess coating, and place them on wax paper to cool and harden.
