Dumplings

  • 1 (16.3 oz) can buttermilk biscuits (add extra 5 oz can for more dumplings)
  • 1/4 cup all-purpose flour

  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Cook Aromatics: In a large heavy-bottomed pot, melt the butter over medium-high heat. Add diced onion, sliced celery, matchstick carrots, and minced garlic. Cook, stirring frequently, until the vegetables are tender and fragrant, about 6 to 8 minutes.
  2. Add Chicken and Broth: Stir in the shredded cooked chicken, chicken broth, evaporated milk, and cream of chicken soup. Bring the mixture to a simmer, then season with salt and freshly cracked black pepper to taste.
  3. Prepare Dumplings: Cut each biscuit into four equal pieces. Lightly toss these biscuit pieces in all-purpose flour to coat them evenly. This helps thicken the broth and prevents sticking.
  4. Cook Dumplings: Gently add the floured biscuit pieces to the simmering soup. Press them lightly under the broth with a spoon or spatula to submerge. Cover the pot with a lid and cook the dumplings for 8 to 10 minutes. Occasionally check and break apart any dumplings that stick together, pressing them back under the liquid.
