Instructions

  1. Preheat and Prep Potatoes: Preheat the oven to 400°F (200°C). Scrub the potatoes clean and pat them dry. Pierce each potato several times with a fork to allow steam to escape during baking.
  2. Oil and Season Potatoes: Rub each potato with olive oil and season with salt and pepper. Place the potatoes on a baking sheet in a single layer.
  3. Bake Potatoes: Bake the potatoes in the preheated oven for 45 minutes or until they are tender and easily pierced with a fork.
  4. Cook Ground Beef: While the potatoes bake, heat a skillet over medium heat and cook the ground beef until browned, breaking it apart as it cooks. Drain any excess fat from the skillet.
  5. Add Taco Seasoning: Stir in the taco seasoning with the amount of water specified on the packet (usually about 2/3 cup). Simmer for 5 minutes, allowing the flavors to blend, then remove from heat.
  6. Prepare Potatoes for Filling: Once the potatoes are cooked and cool enough to handle, cut a slit along the top of each and gently squeeze the sides to open them up.
  7. Fill Potatoes: Spoon the seasoned ground beef evenly into each opened potato, then sprinkle shredded cheddar cheese on top of the beef.
  8. Melt Cheese: Return the stuffed potatoes to the oven for about 5 minutes or until the cheese melts and becomes bubbly.
