Bobby Flay’s Salisbury Steak is a classic American comfort dish featuring juicy beef patties cooked to medium rare and smothered in a rich mushroom gravy. It’s an easy stovetop meal perfect for weeknight dinners that delivers satisfying flavors and a home-cooked feel.

Ingredients

Scale

For the Beef Patties

  • 1 pound ground beef
  • 1 large egg, lightly beaten
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons breadcrumbs
  • 1 teaspoon grated garlic
  • Salt and pepper to taste

For Cooking and Sauce

  • 2 tablespoons vegetable oil
  • 16 ounces sliced mushrooms
  • 1 onion, thinly sliced
  • 1 tablespoon tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons half and half
  • Fresh parsley, for garnish

Instructions

  1. Prepare Beef Patties: In a large bowl, combine ground beef, lightly beaten egg, grated Parmesan cheese, breadcrumbs, and garlic. Mix until well incorporated. Shape the mixture into 4 oblong patties. Season both sides with salt and pepper to taste.
  2. Cook Beef Patties: Heat vegetable oil in a large skillet over high heat. Add the patties and cook for 3 to 4 minutes on each side until they reach medium rare doneness. Remove patties from the skillet and cover with foil to keep warm.
  3. Cook Vegetables: Lower the heat to medium and add sliced mushrooms and onions to the same skillet. Sauté for 7 to 8 minutes until the onions become soft and the mushrooms have reduced and cooked down.
  4. Prepare Sauce: Stir in the tomato paste, beef broth, and Worcestershire sauce into the skillet. Bring the mixture to a boil, then reduce heat and simmer for 3 to 4 minutes until the sauce thickens slightly.
  5. Finish Gravy and Patties: Pour in the half and half to add creaminess. Return the beef patties to the skillet with the sauce. Cook for a few more minutes until the patties are cooked through entirely.
  6. Serve: Plate the beef patties and spoon the mushroom gravy on top. Garnish with fresh parsley before serving hot.

Notes

  • For a leaner option, use ground sirloin or a lean ground beef blend.
  • Breadcrumbs help hold the patties together and add texture; panko can be used for a lighter crumb.
  • Adjust the cooking time based on desired doneness for the beef patties.
  • Fresh mushrooms enhance flavor but canned mushrooms can be substituted in a pinch.
  • Adding half and half at the end of cooking creates a velvety sauce; you can substitute with cream or milk.
  • This dish pairs well with mashed potatoes, buttered noodles, or steamed vegetables.
