  • ¾ tsp baking soda
  • 1 tsp kosher salt (Diamond Crystal brand)

Bread Batter Wet Ingredients

  • 6 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup sour cream, room temperature
  • 1 large egg, room temperature
  • 1 tbsp vanilla extract
  • 1 cup mashed overripe banana

Toppings and Glaze

  • 1 tbsp maple cinnamon sugar (The Spice House brand)
  • ½ cup chopped pecans
  • ½ cup powdered sugar, sifted
  • 1 tbsp whole milk
  • 2 tbsp maple syrup

Instructions

  1. Prepare Streusel Topping: In a medium bowl, combine all streusel topping ingredients (flour, cinnamon, granulated sugar, brown sugar, melted butter, kosher salt) and mix until the mixture resembles wet sand. Place in refrigerator until ready to use.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 325°F (163°C). Line a loaf pan with parchment paper, then spray it with non-stick cooking spray to prevent sticking.
  3. Mix Dry Ingredients: In a mixing bowl, whisk together the all purpose flour, baking soda, and kosher salt to evenly distribute the leavening and salt.
  4. Cream Wet Ingredients: In the bowl of a stand mixer fitted with the paddle attachment, combine the melted butter, olive oil, granulated sugar, and brown sugar. Mix on medium speed for 1 minute until creamy and well combined.
