Ingredients

Scale

Apple Mixture

  • 3 Granny Smith Apples (peeled, cored, and chopped)
  • 2 tsp lemon juice
  • 3 Tbsp brown sugar
  • 1 tsp cinnamon
  • 3 Tbsp butter

Monkey Bread

  • 18 frozen dinner rolls
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 1/2 cup butter

Vanilla Bean Glaze

  • 1 cup powdered sugar
  • 2 Tbsp milk or water
  • 1/2 tsp Vanilla bean paste

Instructions

  1. Thaw Dinner Rolls: Line a baking sheet with parchment paper. Place the frozen dinner rolls on the baking sheet, cover with plastic wrap or a clean tea towel, and thaw for 1-2 hours until softened.
  2. Prepare Apples: In a medium bowl, toss the peeled, cored, and chopped apples with lemon juice to prevent browning. Add brown sugar and cinnamon, stirring until well combined.
  3. Sauté Apples: In a medium skillet over medium heat, melt the butter. Add the apple mixture and cook, stirring occasionally, until the apples are fork-tender, about 5-6 minutes. Remove from heat and set aside.
  4. Preheat Oven and Prepare Bundt Pan: Preheat the oven to 350ºF (175ºC). Grease a bundt pan very well to prevent sticking.
  5. Mix Sugar and Cinnamon: In a small bowl, combine the brown sugar and cinnamon for coating the dough pieces.
  6. Melt Butter: In a separate small bowl, melt the butter for dipping the dough pieces.
  7. Cut Rolls: Cut each thawed dinner roll into four equal pieces.
  8. Coat Dough Pieces: Dip each piece into the melted butter, then toss to coat thoroughly in the cinnamon sugar mixture. Repeat until all pieces are coated.
  9. Assemble Monkey Bread: Add a small layer of the cooked apples to the bottom of the greased bundt pan, then a layer of coated dinner roll pieces. Continue alternating layers of apples and dinner rolls, finishing with dinner rolls on top. Pour any leftover melted butter over the top.
  10. Bake: Bake in the preheated oven for 30-35 minutes. If the top begins to brown too quickly, cover loosely with aluminum foil halfway through baking.
  11. Cool and Invert: Remove from the oven and immediately invert the bundt pan onto a large serving plate. Allow the monkey bread to cool slightly.
  12. Prepare Vanilla Bean Glaze: In a small bowl, whisk together powdered sugar, milk or water, and vanilla bean paste until smooth.
  13. Glaze and Serve: Pour the glaze over the slightly cooled monkey bread. Best served immediately while warm for the most delightful flavors and texture.

Notes

  • Ensure the dinner rolls are fully thawed before cutting for easier handling.
  • Use Granny Smith apples for a tart contrast that balances the sweetness.
  • Cover the bread with foil during baking if it browns too quickly on top.
  • The monkey bread is best enjoyed warm on the day it is made but can be reheated gently if needed.
  • Vanilla bean paste adds depth and aroma to the glaze but vanilla extract can be substituted.
